Introduction
Our client, a leading retailer, requires the service of a Butchery Trainee / Blockman to prepare consumer-sized portions of meat according to customer-specific requirements and to ensure that meat market items are stocked, displayed, and handled in line with food safety standards and company procedures.
Duties & Responsibilities
Key performance areas:
- Ensure staff productivity and teamwork
- Ensure sales maximisation
- Waste control
- Ensure customer satisfaction
- Quality meat preparation
- Housekeeping, food safety and hygiene
Desired Experience & Qualification
The successful candidate must have:
- Matric with relevant qualification
- Must be able to use a band-saw
- Must be able to breakdown a carcass
- Experience as general butchery assistant / sausage maker
- Sound knowledge of butchery hygiene and safety standards and the discipline to enforce those standards
- Knowledge of butchery equipment and supplies
- Knowledge of meat preparation and presentation methods techniques and quality standards
- Knowledge of the Food Safety Act and foodborne pathogens in meat
- Must be able to prepare meat cuts and meat packs according to customer requirements
- Ability to monitor and / or maintain quality control standards
- Excellent customer service skills
- Excellent planning and organizational skills
- Strong interpersonal skills
- Excellent verbal and communication skills
